Many thanks to all participants for making this symposium such a great success!


During the 6th IDF Cheese Ripening & Technology Symposium in Madison, WI (USA) more than 300 participants from 34 countries explored innovative technologies and the latest scientific findings in the field of cheese ripening and technology; exchanged ideas with top international cheese scientists and technologists from academia and industry; and encouraged young scientists to continue participating in this field of research. The three day symposium included a daily poster session plus an optional day of technical tours. The scientific program offered three theme areas: Ripening and Flavor, Physical Properties and Performance, and Health and Wellness. Each day presented several sessions centered on the day’s theme and introduced by an invited speaker plus a poster session.
